тЭУ Frequently Asked Questions (FAQs)

1. Can I make these koftas without potatoes?

Yes! You can substitute boiled potatoes with paneer, soaked poha, or even mashed sweet potatoes. These alternatives help bind the mixture while keeping the texture soft.

2. Why do my koftas break while frying?

This usually happens if the lauki has too much moisture or if thereтАЩs not enough binding agent. Always squeeze out excess water from the lauki and add besan or rice flour to firm up the dough.

3. Can I bake or air-fry these koftas instead of frying?

Absolutely. Bake them at 180┬░C for 20тАУ25 minutes, flipping halfway. For air frying, cook at 200┬░C for 15тАУ18 minutes. Brush lightly with oil for a crisp finish.

4. Can I prepare the mixture in advance?

You can prepare the dough and refrigerate it for up to 24 hours. Shape and fry just before serving for best texture and flavor.

5. What can I serve with dry koftas?

They pair beautifully with mint chutney, tamarind sauce, or yogurt dip. You can also serve them as a side with dal-chawal, khichdi, or wrap them in rotis for a quick meal.

6. Can I freeze these koftas?

Yes. Shape the koftas and freeze them uncooked on a tray. Once frozen, transfer to a ziplock bag. Fry directly from frozen or thaw slightly before baking.

7. How do I make them spicier or tangier?

Add more green chilies or a pinch of red chili flakes for heat. For tang, increase amchur powder or add a dash of lemon juice after frying.

8. Can I use other vegetables in this recipe?

Definitely! You can mix in grated carrots, cabbage, or spinach for added nutrition and color. Just make sure to squeeze out moisture and adjust binding accordingly.

9. How long do they stay crispy after frying?

TheyтАЩre crispiest when served immediately. To retain crispness for longer, place them on a wire rack instead of a plate to avoid steam buildup.
